Phineas of the Sea Chowder

3-4 Medium Idaho potatoes (peeled and diced)
1 C Celery (Diced - save a few of the leafy tops to chop up and add)
1 Large white or vidalia onion (chopped)
1 Can Whole kernel corn (drained)
1.5 C Boiling water
1/4 tsp Black Pepper
1/4 tsp White Pepper
4 Pats of butter (YOU BE THE JUDGE)
1 Can Evaporated milk (13 oz)
8 oz Processed cheese (I use the shredded Velveeta)
1 Can Tiny shrimps (DO NOT DRAIN)
1 Can Minced Clams (DO NOT DRAIN)
1 Can Lump crab meat (use fresh if you can but hard to find in my area)
Dash of Salt if you must
Mix potatoes, celery, and onion in the cooker then pour boiling water over the top.
Cover and cook on low 11 to 12 hours (on high for 4 hours) or until potatoes are fork tender.
Stir in remaining ingredients.
When your Phineas chowder is done sprinkle with shredded chedder cheese and a
couple shakes of Parmesan cheese - VIOLA!

Makes about 2 quarts.
This is just perfect with a steaming hot slice of cornbread but that is a whole other recipe.
