Tennessee Steak Crock Pot Soup

Ingredients

1 stick butter
1/2 C. all-purpose flour
4 (10 oz.) cans beef consommé
1/2 C. diced fresh carrots
1/2 C. diced fresh celery
1/2 C. diced fresh onions
1 8-oz. can tomatoes, chopped
1/2 tsp. ground black pepper
1 1/2 tsp. Worcestershire sauce
2 beef bouillon cubes
1/2 tsp. Accent
1 10-oz. pkg. frozen mixed vegetables
1 lb. ground steak, browned and drained
Directions

Place butter in a crock pot and allow to melt without browning. Add flour to butter and stir to form a smooth paste. After mixture is smooth, cook over medium heat, without browning for 3 minutes, stirring constantly. Add the consommé to the flour-butter mixture and stir until smooth and lightly thickened. Add fresh veggies and seasoning with the tomatoes. Add frozen vegetables and browned ground steak meat. Cook on low for 6-8 hours.

Crockpot Crispy Kielbasa and Cheese Dip

Ingredients

2 8 oz. pkg. cream cheese, softened
4 C. shredded Colby-jack cheese
1 C. Half & Half
2 Tbs. Dijon mustard
2 Tbs. chopped onion
2 tsp. Worcestershire sauce
1/2 tsp. salt
1/4 tsp. hot pepper sauce
1 lb. coarsely shredded kielbasa (have the deli shred it), fried until crisp
Directions

Place cream cheese, Colby-jack cheese, Half & Half, mustard, onion, Worcestershire sauce, salt and hot pepper sauce in crockpot. Cover and cook, stirring occasionally, on low for 1 hour or until cheese melts. Stir in toasted kielbasa, reserving a little to sprinkle on top. Serve with crusty bread, fruit, raw veggies, kettle or tortilla chips, pretzel sticks, great poured over nachos for a different twist.

Crockpot Meatballs and Gravy

Ingredients

2 lb. frozen cooked meatballs
1 10 oz. can condensed cream of mushroom soup with roasted garlic
1 C. water
1 pkg. dry turkey gravy mix
1/2 tsp. dried thyme
2 bay leaves
Directions

Place meatballs in 4-6 quart crockpot. Add soup, water, dry gravy mix, thyme and bay leaves. Cover crockpot and cook on low 6-8 hours or on high for 3-4 hours. Discard bay leaves before serving. Serve over mashed potatoes or buttered egg noodles.

Easiest Swedish Meatballs in Crockpot

Ingredients

1 bag frozen meatballs, 3 lb.
1 16 oz. container sour cream
3 cans brown gravy (meaning you need 6 cups gravy)
1 red onion
Salt and pepper to taste
Garlic powder
Directions

Put meatballs and onion strips in crock pot and warm until meatballs are beginning to thaw. Add gravy and sour cream. Mix well while adding spices. Cook until meatballs are cooked through, about 1 hour. Put over cooked egg noddles for an easy and great meal

Beef Stew (Slow Cooker)

4 carrots, cubed
2-3 small to medium size potatoes, peeled and cubed
1 onion, quartered
1 1/2 lbs. beef stewing meat, cubed
8 oz. can tomato sauce
1 pkg. dry taco seasoning mix
2 cups water, divided
1 1/2 T. cornstarch
2 t. salt
1/4 t. pepper

Layer first 4 ingredients in slow cooker. Add tomato sauce. Mix taco seasoning with 1 1/2 cups water. Stir cornstarch into remaining 1/2 cu water until smooth. Stir into rest of water with taco seasoning. Pour over ingredients in slow cooker. Sprinkle with salt and pepper. Cover and cook on low 7 to 8 hours. Serve over rice.

Variation: If those eating at your table are cautious about spicy food, choose a mild taco seasoning mix and add 1 t. sugar to the seasonings.
