Navy Beans And Sausage.


What's that smell coming from my kitchen?
AH, it's my slow cooker, cooking my Navy Beans.
If you don't know what Navy Beans are, they are usually called small white beans.
I usually start my beans the night before I want to eat them.

I put the beans in the cooker and add about 8 cups of water and the seasonings.
Turn the cooker on low.I let this cook for 10 minutes.
Oh, I can hear you saying "That's not long enough".

After 10 minutes, I remove the lid and add around 3 tablespoon of cooking oil.
Why do I add the cooking oil? This is a little trick I learned.
The cooking oil eliminates the need for soaking.
I let the beans cook all night on low.In the morning, I turn the cooker on high, adding my favorite sausage (pork, beef, mixed, turkey, or deer).
I let this cook on high till the afternoon.
But I do always check to make sure there is enough water.
Then turn back to low, till ready to eat.

Serve these beans over rice with your favorite potato salad and don't forget the corn bread.
